Sichuan Cauliflower Recipe

Ingredients

For the Stir Fry

  • 1 head Chinese cauliflower, cut into florets (regular cauliflower works too)

  • 1 onion, sliced

  • 6 cloves garlic, minced

  • 3 tbsp fresh ginger, minced

  • 1–2 tbsp doubanjiang

  • 1 tsp Sichuan peppercorns, crushed

For the Sauce

  • 2 tbsp Shaoxing wine

  • 1 tbsp soy sauce

  • 1 tsp sugar

  • ¼ cup water

Other

  • Neutral oil for stir-frying

Instructions

  1. Heat a wok or pan until very hot.

  2. Add a small amount of neutral oil.

  3. Stir-fry garlic, ginger, and onion for about 1 minute.

  4. Add doubanjiang and Sichuan peppercorns. Cook for another minute.

  5. Add cauliflower and toss well.

  6. Pour in the sauce and mix evenly.

  7. Cover and cook until tender but slightly crisp.

  8. Serve hot with jasmine rice.
