Morning Glory Stir-Fry Recipe – Leafy Greens for Glowing Skin

Even if I have a cold, I couldn’t resist sharing this! Leafy greens like Morning Glory (Ong Choy / Water Spinach) are packed with beta-carotene and lutein, carotenoids that are precursors to vitamin A, a nutrient critical for skin cell turnover, barrier integrity, and collagen support. These compounds accumulate in your skin and protect against oxidative stress and UV-related damage.

Lightly stir-frying with a bit of oil improves absorption of these fat-soluble phytonutrients, so your skin gets even more benefit.

Why Morning Glory is a Skin Superfood

  • Supports skin glow: High beta-carotene & lutein help maintain healthy skin and collagen.

  • Protects against UV damage: Antioxidants reduce oxidative stress in skin cells.

  • Gut-skin connection: Garlic and fermented ingredients act as prebiotics to support beneficial gut bacteria.

Eating leafy greens regularly helps both your gut microbiome and skin health, a true inside-out approach.
